Glass Noodle Salad with Ginger Miso Vinaigrette


Looking for a little side action? Look no further than this Glass Noodle Salad.  Colorful, flavorful and easy to prepare, it’s a light and fresh side that pairs well with just about any dish.

Calabash Ingredients

  • Chinese parsley

  • Glass noodles (mai fun, long rice)

  • Asian Slaw Mix

  • Ginger Miso Vinaigrette

  • Pickled ginger

You’ll Also Need

  • Salt and pepper


  • Heat-proof mixing bowl

  • Small pot (2 quart)


  1. Wash Chinese parsley and pat dry; pick leaves from stems; discard stems.

  2. In a small pot, bring 3 cups water to a simmer. Place noodles in heat-proof mixing bowl and pour boiling water over to cover. Let stand 1-5 minutes, until softened. Drain thoroughly.

  3. Cool noodles to lukewarm; add Ginger Miso Vinaigrette and toss to coat. Add Asian Slaw Mix; gently toss to combine. Taste and season with salt and pepper as desired.

  4. To serve, divide between two plates; garnish with Chinese parsley and Pickled ginger.
