Glass noodles (mai fun, long rice)
Asian Slaw Mix
Ginger Miso Vinaigrette

Heat-proof mixing bowl
Small pot (2 quart)
Wash Chinese parsley and pat dry; pick leaves from stems; discard stems.
In a small pot, bring 3 cups water to a simmer. Place noodles in heat-proof mixing bowl and pour boiling water over to cover. Let stand 1-5 minutes, until softened. Drain thoroughly.
Cool noodles to lukewarm; add Ginger Miso Vinaigrette and toss to coat. Add Asian Slaw Mix; gently toss to combine. Taste and season with salt and pepper as desired.
To serve, divide between two plates; garnish with Chinese parsley and Pickled ginger.
